carrot cake and disco balls

if you follow my tweets or follow me on facebook you'd know that i made carrot cake waffles for my guests today for breakfast.

i found this recipe via this pin the other day. i'm constantly looking for  new and unique breakfast recipes and this one looked like a winner. i was right.

i did make some adjustments to the recipe. i just used my basic waffle mix recipe and just added the cinnamon, allspice, nutmeg and carrots . i left out the raisins because, as in my experience, most people don't like them. i didn't follow the original recipe because i like my go to waffle mix recipe and there is no way i'm beating eggs whites at 5 am.


no harm done though. as you can see the results were wonderful. see all that grated carrot goodness? they tasted great!

i also adjusted the maple nut cream cheese by adding a little sugar to it. it just needed a touch more sweetness.

so i laid on my dining room floor with some mini disco balls i had in the shoppe and snapped a self portrait.

  2. Michael - I adore the new tablecloth. It is very similar to one I bought in Mexico City at the Ciudadela. I adore your waffle photos, the setting, the plate, the lighting, and of course the syrup dripping over all that goodness. I particularly love your smile and self-portrait. You are an artist through and through.
