Lemon Coconut Waffles

I guess it’s all about lemon here at IBC this week! (Speaking of, did you get a chance to try my super simple recipe for Lemontinis?)

Anywho, If these waffles aren’t worth getting out of bed for, then I don’t know what is! Here’s my latest creation.

I came up with this mountain of awesomeness as a result of wanting to create a unique spring-inspired breakfast using items I had on hand.

I started with my go-to waffle recipe as a base, and jazzed it up with the addition of lemon and coconut.
Here’s what you’ll need to get these cooking…

3 cup flour
3/4 cup sugar
3 tsp baking powder
1 1/2 tsp baking soda
1 tsp salt

3/4 cup sweetened, shredded coconut
3 tbls melted butter
3 eggs
1/2 tsp vanilla
2 1/2 cup buttermilk

1 lemon zested and juiced

Lemon Cream Cheese Icing:
8oz cream cheese (softened)
1 cup powdered sugar
1/2 lemon juice (you may need more lemon juice based on the desired thickness of your icing)

Toasted Coconut for Garnish:
1 cups sweetened, shredded coconut

Got it? Good! Let’s get cooking!

Begin your waffles by mixing all the dry ingredients into a large bowl. Then, mix all your wet ingredients in a medium bowl. Add your wet ingredients to your dry ingredients. Mix until just combined.

Next, cook your waffles. I have a square iron that makes four, 4in square waffles. I use a heaping cup of batter. I like the look of the imperfect edges. I used the hottest setting and cook until golden brown.

 To make the lemon cream cheese icing, whisk together the cream cheese, powdered sugar and lemon juice. Add more powdered sugar and less lemon juice for a thicker icing.

Toasted coconut is the finishing touch for these waffles. 

Spread your coconut on a baking sheet and bake in the over at 300 degrees for about 20 minutes. Stir coconut every five minutes to brown evenly.

Assembly your waffles and your done! 

Honestly, I know these are waffles, but it’s seriously like eating cake for breakfast. And I simply adore cake for breakfast. Doesn’t everyone?

Though Operation 20lbs prevented me from putting my entire face into this plate, I did steal a bite or two… or three.

    Since I love lemon anything these waffles look like a sure winner! One question–in the icing ingredients, is it the juice of half a lemon?
