Make This Margarita Cake Your Summer Party’s Centerpiece

You know I love to bake cakes. You know I love to make cocktails. Now I’m getting crazy and putting the two together!

Last week when I was gathering ingredients for my margarita recipe I had this idea to turn a margarita into a cake. Using the basic idea behind the classic gelatin poke cake, I could add in a few ingredients to turn this cake up a notch.

I think the results are truly unique and quite delicious. I have yet to do a google search to see if this exact recipe has already been created, but this particular version is the product of my own imagination!

As usual, I snapped some pretty pictures along the way. The recipe, which is wonderfully simple, is towards the bottom of the post.

While the cake cools let’s whip up the icing and prepare the gelatin.

Some sliced lemons and limes make an easy and attractive garnish. It doesn’t get much more simple!

Time to slice a piece. And let me tell you, if you like margaritas you are going to love this cake.

And don’t worry, if you don’t like tequila or don’t drink, no problem! Just substitute it for more water or some lemonade. With those substitutions, you’ll have yourself a lemon lime cake.

Who says you can’t have the best of both worlds! I think margaritas and cake are a match made in heaven!

Margarita Cake


Here’s what you’ll need…

1 pkg.  white cake mix (plus water, eggs, oil)

1 tsp lime zest


1 cup boiling water

1 pkg. (3 oz.) Lime Flavored Gelatin

¼ cup cold water

¼ cup cold tequila


1 tub (8 oz.) Whipped Topping, thawed

1 pack instant yellow pudding

1 cup plain yogurt

Let’s get baking …

Prepare the cake batter as directed on package with the addition of lime zest. Bake as directed on for 13×9-inch pan. Cool cake in pan 15 min. Pierce cake with wooden skewer or fork across the entire top.

Add boiling water to gelatin mix in small bowl stirring until completely dissolved. Then, stir in tequila and cold water. Once mixed, pour over cake. Refrigerate for about two hours.

Next, make the frosting. In a medium bowl whisk together whipped topping, yellow pudding mix and plain yogurt.


Add icing to your cake. Decorate with slices of lemons and limes.


Cut, serve, and enjoy! Cheers!
